End of 1, 2, and start of 3.

Two nights ago, I had two wraps with an over easy egg on each, greens from last week’s CSA, pan-seared zucchini and mushrooms. And roasted garlic cheese. And ranch dressing. Oops. I’m pretty proud of the following day but I didn’t have much of an appetite!

  • Eros Organic Greek Yogurt. Strawberry! Getting really into fruit yogurts lately, though I sometimes find them too sweet. Like this one.
  • Whole wheat pasta with roasted red potatoes, mushrooms, and zucchini. A splash of red wine vinegar. Lunch. This filled me up for a long time.
  • Snacked on a handful of almonds and cashews all day. A few chocolate-covered espresso beans.
  • A grapefruit with probably a teaspoon of sugar. A coconut water. Shit tastes like my childhood.
  • Dinner was banh mi and basil seed juice.

I could’ve up’ed it and eaten more greens and fruits, but I think this was pretty fair given how busy I’ve been and a lack of resources. I’m hoping more CSA splits happen and that my garden gets up and running soon. Helping Old Sean till his yard soon so maybe I will try to grow something in the ground as well as pots. Hope the rats don’t get at it. Today’s started poorly already. Breakfast was two squares of cold pepperoni pizza from the work fridge. I also didn’t pack any snacks or fruit or lunch and I have band practice. Oh boy.
