Difficult to tell, but I finished off this sauteed beet greens (two more weeks of the CSA!) and mushrooms (white, button, cheap, cheap, Pennsylvania, mushroom capital of the USA) on melba toast with the last of my black lava salt (and the standby kosher). I’m not eating dairy right now because my guts hurt (genetics rearing its ugly-but-beautifully-maned head with the lactose sensitivity) or else I’d’ve added a touch of goat cheese to even out texture and for that nice pungent contrast to an earthy mix. Good snack for rewatching season two of Mad Men and drinking ginger and lemon tea ‘cause I’m sick as hell. Oh man, lemon would’ve been classy in this, I bet! Liking melba toast is admitting to liking stale bread which, yeah, I do.
