I went over after work to help chop onions for a delicious soup that involved equal parts butternut squash, onion, apple, and potato. After a trip to the big box stores nearby, she packed me a hunk of delicious whole wheat sunflower seed bread that I ate for breakfast plus butternut squash from Sean. The soup’s parts are as follows: one butternut squash, peeled and cubed, four medium red potatoes treated the same way, all sweated in Earth Balance in my enameled cast iron pot. Water until just covered, a glug of orange juice for brightness, a large bunch of frozen mushroom stems, tiniest palm measurement of curry powder and sage, bay leaf, salt, hope, boil, boil, simmer. Strain stems, bay leaf, hope into not a compost pile because I don’t do that here. :/ Immersion blender, taste another glug of orange juice, salt, blend, taste, salt, blend, taste. Velvety and didn’t hurt with fresh grated parm and cracked pepper. Dax cat licked the bowl when I was done. Eat shit, winter.
